Today is my one year anniversary of owning Spring Street Cafe. What a ride it has been. I've learned so much in these past 365 days...I've met some wonderful people....made life long friends...and have created a niche with my signature. I can't begin to elaborate on what that feels like.... It's just something people have to experience for themselves.
Tonight is my anniversary party. I have a band playing and my restaurant will be filled with loyal customers, past and present employees, fellow business owners and all of the friends I have made this year. The windows will be open and the music will drift out into the courtyard while we dine under the stars.
I am truly blessed but I have one regret....that my mom and my kids won't be able to be here with me to celebrate. That would make it the perfect night.

There is a couple who come into my restaurant at least once a week and each and every time, they have something to complain about. Today, at brunch, her omlet and grits were not "loose" enough. Whatever the hell that means. So we made her a new omlet and didn't cook it all the way, giving her "loose" eggs and hand made a separate batch of grits just for her, more runny (for lack of a better term). She still didn't like it... the outside of the omlet was too "done". I was about to bring her out a bowl of raw eggs and ask her if those were "loose" enough for her but my staff wouldn't let me.
All that being said.... Someone please explain to me why you would continue to come back to a restaurant once a week if you didn't like what they served??? Wouldn't common sense tell you not to return????
Are there really people in this world who try to make others' lives miserable on purpose???

Looks like Popeye is SOL again. more outbreaks of e-coli have been found. In my business, this spinach thing has been a nightmare. I use the stuff in a lot of my menu selections. I mean, I am all about healthy, you know. So we decided to replace the spinach with kale where we could until this scare is over.
The other night, a customer ordered a dish where we replaced the spinach with the kale. She freaked out....insisting that we were using spinach. My waitstaff assured her that we didn't use spinach, but she wasn't believing it. She made statements (very loud statements) like... "People have died"... "Haven't you heard about this?"... "Don't you listen to NPR?" With a smile on her face, my employee politely responded... "Ma'am, I'm a chemestry major with a full load, I don't have time to listen to NPR." "But if you watched CNN, you'd know that nobody can even get their hands on any spinach anywhere in the country....enjoy your meal."
God, I love my job.

...is the day. I close on my house today at 2 p.m. But before I do that, I have to make banana pudding, cherry pie, blue berry pie and chocolate fudge upside down cake...and try to fit in an hour of swimming somewhere.
I haven't packed the first thing... not one dish, article of clothing or book that was just unpacked in May. I"m hoping little magic knomes will come to my house while I'm working and do this for me. But as the Colonel used tell me....hope is not a method.

I just turned 44 yesterday and now today I'm turning 45.
I wish I had been born in Morraco. They dont keep track of birthdays and the year that a person is born...then I could be 35 for the rest of my life.
OK...that's not true. I'm glad I was born here... I'm just not glad to be turning 45.

I bought a house....a small farmhouse that was built in 1943. Everything in it is still original, except the bathrooms... It has the original bead/board walls, the original formica counter tops with the stainless steel band...the original kitchen cabinets...original doors and door knobs, fireplace mantel.. blah blah blah...yadda yadda yadda...and even a smoke house that was used back in the 40's to smoke hams for a local hotel/restaurant that is still in business.
Anywaaayyyy.....
The floor has been covered up with several layers of linoleum and now has carpet. Before I start digging, does anyone know the probability of having hardwood floors underneath all of that???
Any insight would be greatly appreciated.

My daughters are on their way to visit me today....they will be here until Friday. I'm so excited I can hardly contain myself.
So yeah, my posting will be light, but then what else is new lately, right?
